Lunch Bar Cupcakes

A Cadbury Lunch Bar twist to a cupcake classic, otherwise known as the Much, Much More cupcake because after one bite, you'll be begging for more. Much, Much More.


  • 200g flour
  • 2 tsp baking powder
  • 4 tbsp cocoa powder
  • 200g castor sugar
  • ½ tsp salt
  • 100g unsalted butter, softened
  • 3 eggs
  • 150ml milk
  • 1 tsp vanilla extract
  • 1 tbsp greek yoghurt
  • 12 tbsp caramel spread

For the icing:


Preheat the oven to 180°C. Sift the flour, baking powder and cocoa powder into a bowl. Add the castor sugar, salt and butter. Mix until it resembles fine breadcrumbs. In a bowl, whisk the eggs, milk, vanilla extract, and yoghurt together until well blended.

Slowly pour the egg mixture into the flour mix to combine. Gently whisk until smooth. Place cupcake cases into cupcake tins. Carefully spoon the batter into the cases, filling each one ¾ full.

Bake for 20 to 25 minutes until lightly coloured and springy to the touch. Leave for a few minutes, then transfer the cupcakes in their cases to a wire rack to cool completely.

Once cool, place a small hole in the centre of the cupcake and fill with 1 tbsp of caramel sauce.

For the icing, beat together the butter, icing sugar, and cocoa powder until smooth.

Ice by hand, using the back of a spoon dipped in warm water to smooth the surface, or transfer the icing to a piping bag and pipe onto the cupcakes. Crumble up the Lunch Bars and sprinkle on the iced cupcakes.
